Production area: Among Mottola and Palagiano, 50 m s.l.m. in the province of Taranto (Puglia, Italy).
Soil: clayey, deep.
Training system: Guyot.
Variety: 100% Verdeca.
Average production per hectare: 90 quintals of grapes.
Harvest time: last week of August.
Harvest: mechanical at night, to preserve the grapes from the strong heat of the area during the day.
Fermentation: The grapes are transported to the cellar, are crushed and transferred into the presses, where is selected the juice, which is the first wort that comes out from the pressing. This wort is placed in a small-sized fermenters where the fermentation takes place at a temperature between 14 ° C. and 16 ° C.
Alcohol content: 13%.
Color: pale yellow.
Bouquet: delicate floral notes of anise, exotic fruits, wild flowers and sea-breeze notes.
Taste: Light, fresh, fine and balanced.
