VINEYARDS

Espalier guyot on tuffaceous-calcareous soils with a density of 4500 plants per hectare.

WINE MAKING

The harvest takes place in the first half of September. Maceration on the skins of this variety with very soft colors, takes place for about 12 hours under high cold. After gentle pressing of the marc, is obtained a clear must with coral pink color. The alcoholic fermentation takes place charged to selected yeasts and at a constant temperature not exceeding 15 ° C.
