Vigneti di Uva di Troia allevati a spalliera con cordone speronato su terreno ricco, argilloso e tendenzialmente calcareo con una densità di 4500 piante per ettaro.
VINIFICAZIONE
La vendemmia avviene alla fine di ottobre. La macerazione ha una durata di 10-12 giorni per ottenere la massima estrazione delle sostanze aromatiche e coloranti. Frequenti rimontaggi all’aria per l’ossigenazione con temperature costanti di fermentazione.
MATURAZIONE
Dopo alcuni mesi in vasche di cemento vetrificato, il vino matura in botti di rovere di Slavonia da 35 Hl. Successivo affinamento in bottiglia per un periodo di 3-6 mesi.

NOTE DI DEGUSTAZIONE
Colore Rosso Rubino intenso con lievi sfumature aranciate e violacee. Netto sentore di viola e di frutta nera. Lievemente speziato, al palato è pieno, corposo giustamente tannico ed impostato sulla morbidezza.
ABBINAMENTI GASTRONOMICI
Vino adatto a cibi ricchi di sapori, arrosti di carni rosse, selvaggina e formaggi stagionati. Si consiglia di stapparlo almeno 30 minuti prima di servirlo, preferibilmente ad una temperatura di 18°/20° C.
