VINEYARD DENSITY PER HECTARE: 4500. SOIL FERTILIZATION: Cover cropping and green
manure of different plants. Pesticide treatments with copper and sulfur.
PRODUCTION METHOD: After manually harvest the grapes are pressed directly without
crushing. Gentle grape pressing without crushing. Follow the cold setting and
fermentation in stainless steel tanks at 16 degrees for 2 weeks. Slow second
fermentation again in stainless steel with charmat system at 14 degrees Celsius
SENSORIAL FEATURES AND PAIRING NOTE: Sparkling wine Rosè. It shows the characteristics of the grape Aglianico. Bright rosè colour; very delicate bouquet, with the aromatic scent; full and well-orchestrated flavour, palate fine and elegant, soft and full bodied. Ideal as aperitif and desserts.

The winery is located within a kind of nature reserve, the Great Forest of Defense, in the territory of Gravina in Puglia, not far from the border with Basilicata, is located at a tableland of about 450 meters above the sea level.
